Rambutan
 
Rambutans originate from Malaysia and Sumatra. Sometimes known as hairy lychees, rambutans grow in clusters on evergreen trees. They possess tropical, fruity, fresh, green/fatty notes with a floral nuance.
Application: Yogurt, Beverages, Dipping Sauces and Glazes, Smoothies, Puddings, Confections, Fruit Preparations, Jams
 


Maqui Berry
 
Also known as the Chilean Wineberry, the Maqui Berry is a small, shiny, purple-black berry that grows on shrub like trees. Maqui berries have the highest anti-oxidant content of any known fruit. Mangosteen
 
Known as the “Queen of Fruits” in South East Asia, the Mangosteen looks like an overgrown berry with a perfectly circular structure. Underneath a smooth, firm skin are five to eight segments of opaque white fruit which is famously described as indescribable. Many have likened the flavor to a combination of strawberry, kiwi and plum.

Star Fruit
 
A native of South East Asia, the Star Fruit was named for its star-shape appearance when sliced across. The fruit features a light green to dark yellow smooth and waxy skin. The taste of the yellow, soft and juicy fruit is compared to a mixture of a tart apple and grape.
Application: Beverages, Preserves, Stews, Puddings
 


Soursop
 
This kidney-shaped fruit features a spiny exterior with a white pulpy inside and black seeds. When sliced, the fruit releases a faint aroma similar to a pineapple.

Yumberry
 
The name of this fruit comes from the Chinese word “Yang-mei,” which when pronounced sounds like, “yummy.” The berry comes in shades of red, pink and white and features a sweet, tart taste similar to the cranberry.

Lychee
 
The Lychee, a tree fruit mainly grown in Southern China, can be bold pink to a raspberry red. The fruit grows in bunches and is about the size of a plum. The Lychee is covered with a rough, leathery rind, which when peeled, reveals a white, sweet and juicy flesh.

Jackfruit
 
The Jackfruit is a tropical vegetable-fruit, which when ripe can have a light yellow to deep green skin. The fruit has a golden flesh and when fully ripe is soft and mushy. It is similar in taste to a ripe cantaloupe.

Salak Fruit
 
This rare palm tree fruit has a leathery, scaly brown exterior, which resembles a snake. The fruit's consistency is similar to a peeled garlic clove and tastes unusually sweet and tangy with a dry and crisp texture. It's flavor is similar to that of a pineapple/apple combination.
Application: Bakery, Beverages, Syrups
 


Cocopandan
 
This common flavor in South East Asia is a combination of coconut milk, pandan leave extract, and a hint of rose.
Application: Beverages, Ice Cream, Cakes, Puddings and other Desserts
 


Yuzu
 
The Yuzu has an uneven, hard skin similar to an orange, but with a golden yellow or lime green skin. The tangy, sour taste is similar to lemon, grapefruit and mandarin orange.

Dragon Fruit
 
Dragon Fruit, or Pitaya Fruit, is said to have originated in Mexico, although it's grown all over South America and Asia. It is actually the fruit of a cactus. It has a subtle, sweet flavor comparable to a melon-like pear with seeds like a kiwi.
Application: Dragon Fruit is best paired with another fruit and can be used in all types of beverages.
